Pumpkin curry with lupin



This spicy curry is delicious with Indian bread or rice.

An easy dish to prepare in advance and warm in 5 minutes.

Ingredients

  • 200 grams of cooked lupins, peeled
  • 1 small pumpkin, diced
  • 150 grams peas from the freezer
  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 1 cm ginger root, grated
  • 1 tablespoon curry paste
  • pepper and salt
  • soy sauce
  • 50 grams creamed coconut(available at supermarket and toko)
  • glass of water
  • olive oil

  • Preparation

    Chop the onion and chop the garlic finely.
    Wash the pumpkin and cut it into cubes of 1.5 cm, do not take the rind of.
    Grate the ginger root with a fine grater.

    Fry the onion and garlic on low heat and add after 5 minutes the pumpkin and ginger.
    Stir well and put the lid on the pan.
    After 5 minutes add the curry paste and a little water and stir well.
    Let it cook and stir frequently to add some water.

    When the pumpkin is soft, add the frozen peas and the lupin beans and leave this for another.
    Finally add the creamed coconut and stir well to dissolve.
    Bring to taste with soy sauce, salt and pepper.

    Tips

    Ginger root can be kept in the freezer and is easy to grate frozen, you do not need to peel it.
    Also delicious with fresh coriander.
