This salad of lupin looks like couscous and tastes spicy. You can mix the salad with tomato, cucumber, olives and bell peppers.

In combination with the Lebanese hats it's a success dish.

  • 200 grams cooked lupin beans, unpeeled
  • 6 sun-dried tomatoes, soaked in water or in oil
  • 4 tablespoons olive oil
  • salt
  • 1 small dried red pepper
  • tomato, olives, cucumber and red bell pepper to your liking

  • Preparation

    Put the lupin, the sun-dried tomatoes and dried pepper in the food processor and grind them fine.
    Cut the tomato, cucumber and bell pepper into pieces.
    Put the lupin mixture in a salad bowl and mix with the oil.
    Make this to taste with a little salt.
    Add the tomato, cucumber, olives and bell pepper.


    Delicious with fresh mint or parsley.
    Also delicious as a take out lunch.
